Simple Oat Muffins

When I was a child, I would look forward to holidays at my grandparents' house in part because of the simple, delicious home cooked meal that my grandmother could put together. She enjoyed cooking and was able to put together a meal that everyone enjoyed. Some of her recipes would crop up again and again on the table, including one of my personal favorites: warm oat muffins.

This is a very old family recipe that came from her mother, at some point in the early half of the 20th century. I'm not sure on the exact origins of it; it may have been an even older recipe to begin with. In fact, back when I spent a few years living in South America and had a hard time finding ingredients to make my favorite recipes, I could always find the right ingredients to make this one since they are so basic. Since the ingredients are so simple and accessible, it leads me to believe it is a very old fashioned recipe indeed.

What makes these muffins so good is hard to pinpoint. Don't be deceived by the basic ingredients, and don't be tempted to add additional ingredients. I've tried adding everything from raisins to cinnamon to nuts to chocolate chips in the past, and every add-in I've tried has often been to the detriment of these muffins. So, resist the urge to add more ingredients and enjoy this simple, healthy recipe.

Simple Oat Muffins

A very old recipe for warm oat muffins.

Cook Time 20 minutes

Servings 6 muffins

Ingredients  

  • 1 cup oatmeal
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 cup white sugar
  • 1 egg
  • 1 cup whole or 2% milk can substitute with oat milk
  • 1/2 cup vegetable oil I use a flavorless oil like organic sunflower oil
  • 2 tsp baking powder

Instructions 

  • Add all ingredients together in a medium-sized mixing bowl.
  • Stir just until blended (do not stir for too long).
  • Pour mixture into 6-8 muffin cups; alternatively, you can use a loaf pan, but the baking time may increase.
  • Bake in a preheated oven at 400 degrees Fahrenheit for about 20 minutes, or until a toothpick inserted into the center comes out clean.

Notes

I do not recommend adding ingredients or substituting ingredients for this recipe. I have tried substituting regular milk for oat milk in the past, and that works out all right, but I recommend sticking to the recipe as it is written.
