Simple Oat Muffins

A very old recipe for warm oat muffins.

Ingredients  

  • 1 cup oatmeal
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 cup white sugar
  • 1 egg
  • 1 cup whole or 2% milk can substitute with oat milk
  • 1/2 cup vegetable oil I use a flavorless oil like organic sunflower oil
  • 2 tsp baking powder

Instructions 

  • Add all ingredients together in a medium-sized mixing bowl.
  • Stir just until blended (do not stir for too long).
  • Pour mixture into 6-8 muffin cups; alternatively, you can use a loaf pan, but the baking time may increase.
  • Bake in a preheated oven at 400 degrees Fahrenheit for about 20 minutes, or until a toothpick inserted into the center comes out clean.

Notes

I do not recommend adding ingredients or substituting ingredients for this recipe. I have tried substituting regular milk for oat milk in the past, and that works out all right, but I recommend sticking to the recipe as it is written.
